Gingerbread Christmas Cookies (vegan)
¼ cup vegan butter
½ cup brown sugar
⅓ blackstrap molasses
1 chia egg
½ tsp vanilla extract
2 cups oat flour
1 tsp baking soda
Pinch of salt
2 tsp ginger
2 tsp cinnamon
¼ tsp allspice
¼ tsp ground cloves
Icing sugar to dust
Preheat the oven to 180 C
Prepare the chia by adding 1 tsp ground chia to 3 tbsp hot water. Allow to cool.
Beat the vegan butter and brown sugar in an electric mixer. Add the flax egg, molasses and vanilla to the electric mixer.
Sift in the flour in a separate bowl. Add the baking soda, salt and other spices. Mix thoroughly
Add the dry ingredients to the wet ingredients and mix into a well combined thick batter.
Flour a surface with remaining oat flour. Roll out the mixture with a rolling pin until 1/2 cm thick. Cut out the mixture into desired shapes-christmas trees, gingerbread men, anything Christmas themed!
Place in the oven and bake for 15 minutes. These make the perfect Christmas treat and taste amazing with your choice of the Milk 2.0 range!
